Who the heck is Cailee?!
Let's get to know each other a little better! Before the recipes, there was Facebook, Jojo music videos, and more.
It’s taking everything in me not to start this off like every maid of honor or best man’s speech ever… ahem, “for those of you who don’t know me, I’m Cailee.” But, maybe that’s not such a bad place to start!
It’s been a while since I’ve properly reintroduced myself, and this feels like the perfect chance to do so. First off… welcome! I’m so happy you’re here. I’m new to Substack, but I’m thrilled to have this little corner of the internet where we can hang out, share stories, swap tips, and get to know each other better. So, in the spirit of full transparency, let’s dive into some fun facts about yours truly.
Most of you probably know me as Cailee Eats. And no, Eats isn’t my last name (although that would be iconic?). My friends call me Cailee, but you can call me either. I ended up here because of a little challenge I set for myself in January of 2022: post one recipe daily on TikTok for the whole month. I wasn’t a stranger to video content (some of you might remember my YouTube makeup tutorial era *hair flip*), but this time I focused on PCOS-friendly recipes, inspired by my health journey.
I was first diagnosed with PCOS in 2018, and then again (fun times!!!) with insulin-resistant PCOS in 2020. One of the most effective ways I’ve found to manage symptoms is through simple, whole foods that make me feel good. The keyword here is simple. I’m a foodie, but if a recipe is too complicated, I won’t even attempt it. It’s been such a joy to discover that so many of you also appreciate easy, delicious cooking. Thank you for being here! 🥹
I’m originally from the beautiful state of Washington, and my love story goes way back… like youth group in middle school. My husband, Eddie, and I were friends back then (and only friends… seriously, no crushes involved). We stayed in touch until his family moved away in high school, and like most teens, we lost contact.
Fast forward five years. On my birthday, he was doing a little Facebook cleanup (lol, remember that?), and his rule was if it’s someone’s birthday and you’re not close, it’s time to unfriend. When he got to me, he paused and instead of deleting, he wished me a happy birthday. I gave the standard “thanks, hope you’re doing well… we should catch up sometime,” not expecting anything. But he followed up with a text just to see if I still had the same number.
I did. And we’ve talked every day since.
We dated long-distance for 8 months (me in CA, him in Chicago), and when I was ready for an adventure, I moved to Chicago. The rest is history.

All together now: “awwwww.” We just moved into a new home here in WA with our Bernese Mountain Dog, Koda. She’s been a huge fan of my career as she gets to clean up the kitchen floor.
When I’m not filming or editing content, you can find me decorating our home, attempting to grow strawberries, or pretending I know what I’m doing in the garden. We’ve been trying to grow our family, too! We’re currently going through infertility treatment after nearly three years of trying for our first baby. If you’re on a similar journey, my heart is with you. Here's to patience, resilience, and hope. Maybe this year is our year!! 🤞 I’ve assembled some of my TTC favorites for you here.

I’m obsessed with reality TV. Current lineup: Summer House, The Valley, Below Deck, and Next Level Chef. I’m a forever fan of Survivor and Amazing Race, though I’d get voted off Survivor immediately… I need snacks.
Speaking of snacks… my current favorite snack is cottage cheese + pineapple + a sprinkle of Tajin. YUM.
And because I am ✨ me ✨, I had to leave you with at least one yummy treat. Here’s my favorite “nightcap” recipe for you:
¾ Pellegrino sparkling water
¼ Revl Fruits Paradise Guava Juice
1 packet Nello Raspberry Lemonade
Mix it all together, cuddle up with your dog, and turn on your favorite reality TV show for the real Cailee special. All the items you’ll need are linked here.
