As we start easing into spring, I always find myself craving meals that feel a little lighter. The days are getting longer (thank goodness), everything feels a bit fresher, and I’ve been leaning in. In this month’s “What I Bought vs. What I Made,” I’m sharing more easy go-to recipes that are perfect for busy weeknights this time of year.
Here’s what’s on the menu:
Spicy Chicken Caesar Salad: fresh, crunchy, and topped with crispy chicken.
Sundried Tomato Chicken Pasta: creamy, a little spicy, and comforting.
Mediterranean Stuffed Sweet Potatoes: hearty, fresh, and packed with flavor (loved this one).
Tomato Soup + Protein Grilled Cheese: a cozy classic with a more filling twist.
Peanut Salmon Crunch Bowl: crunchy, saucy, and full of fresh flavor.
